Payroll Check Legality North Carolina?

I am currently the G.M. of a restaurant. My duties include signing and writing checks for vendors and payroll for employees which include myself. Over the past 4 months I have signed and issued around 150 checks with my signature. I am leaving my job for a better one but I know that the owner will try not to pay me for the money that he owes me, he is notorious for that. I made a check out for the balance of one week that he owes me plus the first week of payroll he held back. If I cash this check would it be illegal?
